And my hands-down favorite Lao dish, Laap. I prefer Fish Laap, but this particular one was made with minced Water Buffalo meat and stomach bile. Believe me, it was delicious!

Night Food Market in Luang Prabang, Laos. All you can load onto a great big plate for $2! A delectable bargain!

Witness the devastation! This WAS a meal of deep fried Elephant Ear Fish with piles of rice vermicelli noodles, mounds of fresh herbs, many layers of rice paper to wrap it all in, and a bottle of chili sauce (which came brand-new, seal unbroken). I'd say we left nothing but culinary destruction in our wake! And all for 185,000...Vietnamese Dong! US$ 8.00! For three people! (My husband, our boatman, and myself) Near the floating markets of Can Tho, Viet Nam. SOUTHEAST ASIA ROCKS!!!!!
